Delicate yoghurt mousse with vanilla aroma perfectly complements aromatic strawberry jelly with light notes of citrus and fresh juicy strawberries.

~ mold 15 x 15 cm
INGREDIENTS:
YOGURT MOUSSE:
~ Greek yogurt 9% 300 g
~ cream 33% 225 g
~ sugar 75 g
~ vanilla
~ gelatin 180 Bloom 19 g
~ water for gelatin 95 g
STRAWBERRY JELLY:
~ strawberries without stems 400 g
~ sugar 35 g
~ zest of 1/2 lemon
~ lemon juice 3 g
~ gelatin 180 Bloom 15 g
~ water for gelatin 75 g
COOKING
❗️After pouring each layer, put it in the refrigerator to harden. Yogurt and strawberry mixtures are prepared on all layers at once. If it hardens, before pouring, heat it just a little in a water bath, stirring constantly with a whisk.
Cover the bottom of the mold with cling wrap.
YOGURT MOUSSE
Pour gelatin with cold water and leave to swell for 15 minutes. Or cook according to instructions.
Beat the cream with a mixer until soft peaks form, until the ice cream forms.
Combine yogurt, sugar, vanillin. Heat gelatin until dissolved, pour into yogurt, mix. Add half-whipped cream and divide the mass into 3 parts (~ 235 g each).
Pour one part into the mold and put it in the refrigerator.
STRAWBERRY JELLY
Pour gelatin with cold water and leave for 15 minutes.
Puree strawberries with lemon zest in a blender. Strain through a sieve. Weigh, you need 350 g. Add sugar, lemon juice.
Heat gelatin and combine with strawberry mixture. Divide into 2 parts ~ 235 g each. Pour onto the frozen layer and into the refrigerator.
And then, alternating, fill in the remaining layers.
Cover with cling film and place in the refrigerator to stabilize for 4 hours.
Decorate, slice and enjoy 😍
