Chicken and Wild Rice Casserole
3 to 4 cups cooked and shredded chicken
1 box Uncle Ben's original wild rice prepared
1 med onion Chopped
1 4oz jar pimento
2 cans green beans drained
1 can cream of mushroom soup
1 cup mayo
1 cup shredded cheese
mix all together and pour in Casserole dish. bake at 300° for 30 minutes

You are so right. 6 years ago I stepped off a ledge in front of the hospital, mangled my ankle, 5 big surgeries, and I am now partially handicapped. Amputation was the next step if the last surgery failed. I am so thankful I still have a foot and during 3 years bed and wheelchair bound I had the greatest time studying God’s Word and discovered some great bible studies thru Proverbs 31 org. PTL‼️❣️‼️

I change recipes all the time,that's what cooking is about,adapting things to your liking and being creative is the fun part of cooking. The casserole dish looked delicious 💕

A couple months ago you asked for prayer request. I sent one in for my daughter who was going through a really rough time. I missed her smile and her twinkle.. thank you.. she is getting better everyday.. her smile is returning... btw, I have and love stained cabinets.. I love the look of real wood

This casserole looks very delicious definely going to make this. I already have everything that goes in it on hand. One thing I would add is some drained diced tomatoes and garlic toast served with it and chilled fruit like a bowl of pears or peaches for dessert. Adapting recipes to one's own personal taste, or family's taste makes cooking fun, and makes it one's own. Both my Mom before she passed away and I loved to adapt recipes. When I was cooking for Dad I had to stick with the basic recipe because, he didn't care for change. Remodeling is something I need to do myself. I need new cabinets in the kitchen and new table and chair set. But, first I have to get the porch roof fixed before doing anything else. I live in my homestead mobile home after both my parents passed away. And, every room needs remodeled because, we moved in this place when I was seventh grade in the 1970's I also want to change things around some making it my own place, while keeping somethings intact of MOM's that hold memories.It will require alot of thought.

I'm so happy for your news about your kitchen remodel. I understand your desire to have lots of light. When we did our kitchen, we added a lot of can lights {recessed lights) in the ceiling. They flood the room with light and we love them. Maybe that would work for you, too. I look forward to seeing the process happen. Blessings!

I do that, too, Leslie! Husband hates peas, so I always have to substitute those. Plus, he allergic to dill. I always have to do 2 different potato salads and replace pickle juice with vinegar for him. I never add dill to anything I make for him.

I chose a light stain for my beautiful new oak cabinets and I prefer brass hardware. My preferences are not the "in" favorites, but they are my favorites. It's YOUR kitchen, it should make YOU happy. It's going to be a lot of work, but so worth it in the end. God bless!

I’m so excited about your kitchen. My husband and I live in my grandparents house and it’s over 80 years old so I understand how you want(need) to change things. We have had to remodel a lot of things in the last 20 years and still need to do more. The casserole looks delicious and I will try that very soon.

Thank you!! I have been searching and searching for this recipe for 30 years!! I used to make this all the time and everyone loved it! Many moves later I lost the recipe. Can't wait to make it again! I add french fried onions on top in the last 15 minutes of cooking.

Thank you. that looked so good I was waiting for a bite. and your right I would' not have used the cream of celery soup, if it calls for cream of celery I always put cream of chicken. and then I thought the only other thing I would have put in it was a chopped onion, lol then you said you forgot the onion I just laugh two great minds think alike. can't wait to make this. I just love you and your family, you are like is what it is.cause that is real family life..

Being offended seems to be a lifestyle for some folks. They'd be a lot happier if they'd just relax and think in a positive manner! I love collecting recipes but I also love learning how others adapt those recipes to their tastes.

I have a friend who loves chicken& rice casserole but he doesn’t add cheese so I’m loving this one and let him try it I say it’s a Winner yummy! U mentioned stewed potatoes we grew up eating them yum 😋 now I’m in to baking a lot of root vegetable with my meals I’m loving all root vegetables stewed tomatoes would be great with this dish

I remodeled my kitchen a few years ago and used a maple wood (very hard, durable) and maple finish with a coffee wash. I love them. They aren’t dark, not too light. Just right. Color is easy to bring out in wall paint and accessories. I’m excited for you!

Glad to see this recipe! I lost my copy. Made this 30+ years ago and have been trying to recreate it! I have used a copy cat recipe for wild rice using quinoa and it was good , too. I also add water chestnuts. Fed this to a group of my husband’s coworkers and most everyone had at least second of not thirds. There were so many of them I roasted a whole turkey! Good for freezing if you make several.

I've made that casserole before and changed the recipe, it's delicious! Didn't thank water chestnuts sounded good. We're in the process of remodeling also. I'm going with a hickory wood that's sorta light. I love the knots in it. You get whatever suits your fancy. If they don't like it, we'll it's not their kitchen!

I shred my chicken too,but all chicken I cook ,I marinade it in a bowl of water with two table spoons of baking soda.It does two things .it cleans the chicken and makes it real moist and silky .

I think some people have gotten away from cooking so they don't realise the benefit of cooking from home or making do with what you have on hand.

Well, such a sweet video!! Your son is adorable! You must be thrilled with your kitchen remodel. I will live vicariously thru you😁. Just buy what you love. Not anything someone tries to convince you of, not resale value and not what’s on sale. What does Leslie love and how do you move about your kitchen? Are you a Classic gal, a contemporary gal (🤣on that one, I’m guessing’), a Joanna Gaines gal, etc. Maybe you could put in double windows for more light?? I think that’s the first thing I’d start with. God be with you on this kitchen journey. Enjoy the moment friend💕. You are very blessed. Darlene

I am definitely a believer in changing the recipe if your family doesn’t like a certain ingredient. Try serving a salad with your meals it will make a real difference. I will try your recipe it looks really delicious.

White cheddar, havarti, dried cheese, brie, velveeta texture & flavor aspects I'll use cream cheese as an ex more in moderation again, it doesn't take much Chicken or turkey drippings over the rice in oven Peppers good flavor profile So is some lemon juice, or lemon pepper better still I keep containers of mixed seasonings for various types of dishes Yes, experiment Rice is sure versatile

Recipes are a starting point then you add, change or substitute what you want to make it your own or at least that's what my adopted grandmother, her granddaughter (my home economics teacher), my mother and her good friend (an awesome Irish lady and cook) all told me. My mom only stressed that veggies weren't optional but a necessity in every meal...I was a picky water.

Looks good. Oh my gosh girl I thought I would die Easter Sunday morning when I had to grade 2 pounds of extra sharp cheese for my Macaroni and Cheese. I thought my arm would fall off. I'm buying a food processor. I had one for years that mt grandma bought me and I grated tons of cheese with it. It is beyond time for me to have a new one since mine gave out at least 10 years ago. I'm too old to do it by hand anymore. A skylight for the kitchen will make it lighter. Have a Wonderful Dinner.💗🌞💐

I agree with you Leslie on a recipe it’s a baseline where to start from now if all the ingredients in a recipe are something that I believe my family would enjoy I will try it then if it was a hit and they would eat it again but say something like it had too much of this or that I would adjust it the next time if I find an ingredient in a new recipe that I know my family doesn’t like I will omit it or substitute it for something else that’s being creative if someone enjoys cooking it should be enjoyable and fun. I enjoy watching your videos ❤️🙏🏼

Of course you need cheese on top, too! For toasting the bread for BLTs, I'd put them on the large sheet pans and stick them in the oven.

Thank you very much Leslie I lost my recipe for this years ago and have been fiddling around and since I got internet I have tried to look it up on several things I'm not subscribed to food Network and I think she might have done this at food Network and I don't have to have any Paula Deen cookbooks but I never found the right one and I know this is it. I fiddled a couple times but I knew I was missing something. I'm saving this one for my old age now.

Actually I think the main thing I wasn't getting right was maybe the pimentos I don't know I remembered it was the rice and the green beans and the chicken and there was cheese and mayonnaise in it because that was one of the first recipes for a casserole I ever made using mayonnaise as a northerner

Love this recipe but next time I'm going to top it with french fried onions. Gives a wonderful texture/crunch.

This looks REALLY good! I'll have to give it a try. I've never used the wild rice. Wondering if you can use regular jasmine or basmati rice?? Thanks for sharing it!!

You could try it but I'm afraid it would not be as flavorful as using the Uncle Ben's with the seasonings.

Try toasting bread in the oven. You can do a big batch at one time.
