Delicious Eggplant ( Brinjal) Dum Biryani-Layered With Cooked Rice And Curry- Ready In 30 Minutes

Mouthwatering Brinjal biryani
My version of a yummy homemade eggplant biryani , ready in 30 minutes. Biryani with brinjal gravy and some onion raita makes a heavenly combination.
The eggplant-and rice are cooked separately, then layered and steamed together in the microwave.
Ingredients :
2 cups Basmati rice cooked
2lbs Eggplants ( Brinjal) - 3 to 5 medium sized
3 Onions sliced
Ginger 3 inch piece.
Garlic 10 to 12 cloves
Green chillies 3
Curry leaves.
Coriander and mint leaves chopped a handful each
Lime juice or vinegar, 1 tablespoon.
2 Tomatoes sliced
Red chilli powder 1 teaspoon.
Turmeric powder ½ teaspoon.
Garam masala powder 1 teaspoon.
( equal quantities of cinnamon, cardamom, nutmeg, star anise and cloves powdered)
Salt as needed
Oil or butter 3 tablespoons
Ghee
Fried cashews and raisins
