Just an FYI, ventricles are the name of the chambers themselves so if you cut those out you would have nothing left to eat, what you are cutting out are called valves and chordae tendineae.

Pro Tip: Use an oil with a higher burn temp to reduce oil from smoking in the pan. Extra virgin olive oil is made for dressing, dipping, etc so it burns at a much lower temp. Use flaxseed, avocado, or your stand olive oil to prevent your kitchen from smoking.

FYI- the chambers of the heart are called the ventricles and atria. The two on top are atria, two on bottom are ventricles. The sinewy, stringy structures on the inside of the chambers are called chordae tendenae.

Awesome video guys---as always! I'm definitely going to try this recipe. You're probably going to laugh, but at elk camp we cut off the white membrane as you did. We then remove the top, outermost ventricles keeping the heart whole. Next, we rinse the heart and valves out thoroughly in a pot of water while getting the excess blood removed from the inside..pat dry with a paper towel. Then we cut the whole heart into "rings", toss into a dish of krusteez pancake mix batter covering thoroughly. Toss into skillet with hot oil and flash fry for just a couple minutes. Remove promptly and serve piping hot with A1, Heinz 57 or your favorite condiment. It is complimented nicely with an ice cold beer. Best part of the animal IMHO.

Our family's favorite way to cook any large heart is to put it in a crockpot, cover it with mushroom broth, add onions, parsnips, turnips, carrots, potatoes, and mushrooms. Then add seasonings like bay leaf, whole garlic cloves, smoked paprika, salt, pepper, and kitchen bouquet. Then we cook it low and slow for several hours. You don't even have to be quite so scrupulous about triming it, as long as it is covered with the broth it cooks tender as butter.

just made tacos on Saturday with two mule deer hearts. did a different recipe (bulgogi style street tacos). but the heart is probably my favorite cut of meat of wild game next to the backstrap. I tend to brine all my meat for alittle as well. my mother never had any wild game heart till I made these and she went back for seconds for them. keep up the awesome videos

Good stuff! I frequently have spiderman helping me in the kitchen and he loves elk heart. I would make one recommendation though. It is much easier to remove the pericardium (the white sack around the heart) at the end after you've sectioned the heart into the 2 pieces and removed the values, etc. You just filet the sack off at that point.

Yes its an organ, but after trimming, its really just muscle like any of the rest of the flesh of the animal that we eat. It happens to be a muscle that pumps blood, but still muscle. Looks delicious and great dad humor!

You can do a salt water brine and stick the whole thing in a crock pot with your choice of veggies and some beef bouillon cubes.

I tried the brine you guys used on the bear back strap and rear quarter. But added some jalepenos and used pork loin. And made tacos with it and oh my gosh! You guys should try it out!!
