250 ml glass
18x28 cm baking tin
Ingredients:
Shortcrust pastry:
150 g wheat flour (1 glass)
30 g powdered sugar (2 tablespoons)
5 g baking powder (1 teaspoon)
2 cold egg yolks
100 g cold butter (half a cube)
Knead all the ingredients.
Put the dough on the bottom of an 18x28 cm baking tin. Prick with a fork. Put in the fridge for 30 minutes. After this time, bake for about 20 minutes without fan, top and bottom heater in an oven preheated to 180 degrees on the 2nd level from the bottom.
Meringue:
4 egg whites
a pinch of salt
3/4 cup of sugar
Beat the egg whites until stiff, gradually adding the sugar.
1 tablespoon of potato flour
Mix briefly
3 tablespoons of blue poppy seeds
Mix briefly until combined
On baking paper, draw a form in which you will make the cake and spread the meringue like this. Place in an oven preheated to 170 degrees and immediately reduce the temperature to 80 degrees, turn on the fan and dry the meringue for about 90 minutes.
Pudding mass:
600 ml of milk
half a cup of sugar
Pour about 500 ml into a pot, leave 100 ml until the pudding dissolves. Boil.
2 sugar-free cream puddings (40g each)
Dissolve in the remaining milk and pour into the boiling milk. Heat, stirring constantly until the pudding boils
Pour the pudding into a bowl and cover with foil on contact. Set aside to cool completely.
Raspberry jelly:
600 ml boiling water
2 raspberry jellies
Stir until completely dissolved and set aside to cool
1 stick of soft butter (200g)
Beat until the butter is white and fluffy
While constantly mixing, add the cooled custard spoon by spoon
400 g raspberries (I used frozen ones)
When it starts to set, pour over the cooled cake
Pour the cream over. Refrigerate for 30 minutes.
Spread the meringue on top and refrigerate the cake for at least 4 hours, preferably overnight
