Chef Carl Casper not really, I mean he knows how to cook but I mean if Gordon Ramsay was making this, I bet he would cook the bacon first on the pan then add the onions to caramelize and then add the potatoes and a touch of butter AND a drizzle of olive oil and fresh finely chopped parsley and VOILA, potatoes ala Gordon, how do I know this? I have studied his cooking methods for years now and also I am in the master class lessons so yeah

Made this this morning with a couple eggs over easy. Delicious! Make sure you don't over cook the potatoes in the boiling water. Mine were a little too soft and sort of fell apart in the skillet. Also didn't have the smoked paprika, but used regular paprika, which was fine, but i want to try this again with the smoked. Great recipe Sam! I have leftovers that will be used tomorrow!

Before I even watch the video..I'm loving it. I grew up (in Illinois) with fried potatoes for lunch. But we called lunch...dinner. it was breakfast, dinner, supper. Lunch was some kind of something you got at school. I watched as far as when he said he wasn't going to drain bacon on paper towels. Yeah..I'm sold. I bet he saves his bacon grease too. That's the best. I don't eat 3 meals a day for decades. Does anyone? This is meal in itself. I'm a happy camper. I'll go watch rest of video now.

This is pan fried potatoes 101. I toss, the par boiled spuds cut wide, in flour and a bit of hi temp oil then fry in cast iron (it does make a difference but not the end of the world if not) with a couple of garlic cloves sliced. Till golden ~4 min and then flip for the other side.

Tip: Boil the potatoes whole, like Sam does. If you cut them in smaller pieces and then boil, they'll absorb too much water and take forever to brown. Also: cut your onion into pieces roughly the same size as your potatoes, otherwise they won't really blend.
