INGREDIENTS:
240 g (1 ⅔ cups) buckwheat flour or all-purpose flour
75 g (¾ cup) almond flour (finely ground almonds)
2 Tbsp ground flax seeds or chia seeds
130 g (⅔ cup) Erythritol or sugar of choice
2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1.5 tsp gingerbread spice (optional)
240 ml (1 cup) dairy-free milk of your choice
50 g (4 ½-5 Tbsp) oil of your choice
240 g (1 cup) applesauce
2 tsp vanilla extract
5-6 drops of rum flavoring (optional)
400 g (4 small) peeled apples chopped/ sliced

Dankeschön für das tolle Rezept..habe ich gleich ausprobiert..habe die Äpfel geraspelt,gesüßt mit Kokosblütenzucker..mit gehackten Mandeln bestreut..sooo super lecker 😋 😋 geworden..lg❤

​@@ElaVeganLeinsamen bzw. Chiasamen. Die Fettsäuren gehen großteils hopps beim Erhitzen. Und die etlichen Gramm Natrium (Bachpulver, Natron). 😊

​@@anne-kathrins2721Backpulver und Natron findest du in so ziemlich allen Backwaren und da die Mengen so gering sind, sehe ich darin auch kein Problem, zumal man nicht den kompletten Kuchen auf einmal isst... Deine Meinung zu Chia- bzw Leinsamen teile ich gar nicht, also da gibt es doch wirklich weitaus ungesündere Zutaten. 😊

@@ElaVegan Mit den Samen ist keine Meinung, sondern Lebensmittelwissenschaft. 😅 Ich bin Biotechnologe. Die Summe macht es beim Salz und wenn ein Stück Kuchen schon gut ein Gramm hat, bist locker bei 10 Gramm am Tag, manche Menschen schaffen es auch auf 30 Gramm, man meint es ja nicht... Wir nehmen Kaliumhydrogencarbonat plus Zitronensäure. Funktioniert genauso, ist aber um Längen gesünder. Bei dir geht's um massentauglichen Geschmack, mir geht's nur um unseren Geschmack und unsere Gesundheit. Das ist der Unterschied. Und ich weiß aktuell tatsächlich nicht, wie ich schleimende Samen ersetzen soll. Flosamenschalen alleine funktionieren nicht, das fehlende Fett verharzt ja nicht, wie bei den Samen. 😅 Gute Konsistenz, aber das wollen wir nicht durch unsere Adern gepumpt haben. 🙂

@@ElaVegan Gerade Leinsamen oxidieren bereits zwei Wochen nach der Ernte, da braucht es nicht einmal Temperatur. Das war eher auf die Chiasamen bezogen. Frisch vermahlen und untemperiert sind Chias eine gute O3 Vorstufe (wir bevorzugen da eher fetten Fisch oder Wild). Unvermahlen werden sie einfach unverdaut ausgeschieden. Gibt ausreichend Studien hierzu.
