If I use the steaming wand first, then the espresso buttons keep blinking and the machine needs to be restarted. Is it normal? Also is there a way to reduce the steam pressure?

@@kiransasi1366 Steaming water is hotter. The lights keep flashing on the espresso buttons because the machine needs to cool first. So either pull your espresso shots first, or wait for the machine too cool down (the lights stop flashing), or pull water through the wand which brings cooler water into the boiler.

Instead of using money on a "distributor" thingie mybob, I had an unused comb leftover in the packaging from a hair trimming machine purchase. I cut off a piece of the comb, and broke of every 2nd pin, and attached a little stick to it. It works great!

1:15 Hi, I have few questions. Shouldn’t you stop at 25 or less grams to have 28 g in the cup? Right now I see that you got 33.2 g which not actual 1:2 ratio. When you stop at 28 g isn’t still extracting as liquid is still running to your cup? Also, about 1:2 ratio and time for 14 g coffee. Should it also be 25-30 s? I saw a lot of videos and read articles, but most of them were using 18-20 g of coffee and were suggesting 25-30 s. So I wonder if time should be the same or shorter for 14 g. Thanks in advance! :}

Hi there! Yes, you could stop in advance. I just try to switch the cups out quickly. You can still attain a 2:1 ratio with 14 grams, but only if you are using fresh beans and grind fine enough. In the meantime however, I am using the Dedica with about 16 grams, and aiming for 30-35g out. Cheers!

What is the exact extraction time for the 14g bottomless shot? 2. My Bottomless portafilter basket has a lot of space left between the tamped coffee and the brim when I’m pulling out 14g shots. Whereas, with 18g it fills up appropriately. Would this space affect the quality of the shot? Also, Can you please make a video for single shots (7-10g) for the Delonghi Dedica with the bottomless portafilter?

Hi there! Thank you for your kind feedback. I would say to aim for 25-30 seconds for a double, including preinfusion. A single will probably be shorter to pull. I could make a video...it's harder to pull singles, since the baskets are so shallow. Which single basket are you using? A Graef? Cheers, Tom

Hi! A double is traditionally 14-16 grams, but it really has to do with volume. You need to fill the basket and tamp it, so that there is still a few mm of head space above the puck. This generally translates to 14-16 grams, depending on the roast. Cheers! PS - I start counting my shot when pressing the button, since that is when the process starts, and when the coffee puck starts absorbing the brew water.

It made me buy Dedica 685 plus metal nozzle for improving steam wand and, at last, NPF to see those beautiful tiger strips on liquid running into a cup. As I am waiting for the delivery I got a question. Your espressos look beautiful, you mentioned you worked on pro machines, so how good espresso could Dedica made if everything is done as it should be? Would you compare it somehow to espressos done by pro machines you used to work with? Will shots from De'Longhi make smile on my face by feeling something extraordinary in my mouth? Or rather the shots from 685 won't be in any way comparable and not even close to those produced by, at least say: Gaggia Classic, Rancilio Silvia, Lelit Anna? Hi there! Well, I think you need to put things into perspective. In the EU, the Dedica only costs €150. For that price point and a couple of mods, it provides a very good result. You will probably need to surf a little with the steam mode hack, to get the temp up. I have used Dalle Corte machines, costing more than my car. Those provided of course better espresso. But you have to consider that those machines run 12 hours a day, so they are at perfect temperature, along with their pre-warmed cups, they have a consistent workflow (temp and pressure curves), and the espresso beans were top notch. To render the situation, I do not think that a GCP or Silvia, which cost 3x more, make 3x better espresso. You will have to experiment for yourself. Cheers! Tom

I’ve set the volume about 30g with 15-16g of coffee beans manually and followed the exact same procedure, but whenever I checked the extracted amount with another shot after I programmed, It’s always 39g or even 41g🥲 so it basically has no point of setting the volume. Do you have any advice on this? And I also wonder if it works exactly the same as you set when you pull another shot

I got the portafilter you recommended as well as the Ims sieve 16/18 I use quality coffee, freshly ground (I've tried several types) and I also have a good scale with which I accurately determine the weight, but when pouring the coffee, the water passes quite quickly and does not create foam. Can you tell me what the problem is?

I buy 250g and store it in a vacuum package that draws the air out of the box. Considering the amount, it doesn't take long for it to lose its properties, at least that's my opinion.

What I knew that the programing and the timer starts with the 1st coffee drop. But u start machine and timer at the same moment. Which may cause a difference by 8 sec. Maybe I am wrong. But this is how I program min. Best regards

Hello Hesham, this is pretty heavily debated. Some say first drop, others say when the pump turns on. The important thing is to be in the ballpark (25-35 seconds let’s say), and it should be reproducible. Also, you have to trust your taste buds as well. The espresso taste will ultimately tell you if the espresso was over (bitter) or under (sour) extracted. Cheers ☕️ Tom

*Update - it is filter basket. Tried a good one and everything was OK. Didn't believe the difference. Dear Tom, I did some crucial changes, especially with coffee beans, about 2 months old, but no crema again. More crema I get from default portafilter than bottomless. Thank you for the inspiring video. I can see you replaced the steamer. I recently replaced my dedica steamer with the rancilio silvia steaming wand compatible with dedica. I haven't been able to foam my milk since 😭 all I am getting is hot milk, no foam at all. The wand comes with 1 hole tip, and 3 holes tip. I tried both, with glorious failure 😭😭 Question 1: Which tip is better? Question 2: What should I do to foam my milk using this new wand?

Hey Omar, thanks for the good question. 1) I only have the 1 hole tip, so I cannot comment on the 3 hole tip. But my experience with other machines is that the 3 hole tip will be faster at steaming. 2) As you probably know, the most important thing to do after adding a bit of air in the milk, is to get the milk SWIRLING. To do this, try placing the tip of the steam wand JUST under or at the surface of the milk, really CLOSE to the edge of the pitcher. Try adjusting the angle of the pitcher to the steam wand too, to get the swirl going. Once you get a swirl, don't change the angle, just keep the swirl going. *I will probably soon make a video with the mod, how to steam milk with the Rancilio wand. Happy coffee drinking!

Could it possibly be that not much steam is coming out? If the connection has not been made very securely, you may have less steam than you need. Maybe a stupid question - I notice everyone seems to do double shots but is there any disadvantage to doing single shots? eg is the extraction as good. I use 14g coffee at the moment but drink quite short milk drinks so could drop to like 10g/.

Hi there. Double shots are easier to pull. The single baskets are not as deep, and therefore not as forgiving. But you can try to perfect that, if you like. In Italy, they mostly make single shots. Cheers!

Great video Tom as always. I am struggling with the extraction time on my dedica. Although I use the finest grind setting on my Brevile espresso grinder, for 18 gr coffee with 1:2 ratio, extraction takes 20s only. I use an IMS filter with a calibrated tamper. I have used other unpressurised baskets and have same problem. Any idea?

Hey Saeed, which model grinder are you using? How hard are you tamping? I have worked on professional machines before, and the pressure of the tamp does make a marked difference. If I would tamp medium, the shot would run in 12s. If I would tamp as hard as I could, it would run in 22s.

My grinder is Breville dose control pro and my tamp pressure is about 15-20 kg. The only way for me to achieve a 30 s extraction is to use 20gr dose of coffee with the finest setting on the grinder!

I'd the same issue. Changed the portafilter and good now. With the ofiginal the coffee was to fine grinded and didn't allow water to go through or too much tamped. Now aiming for 1:2 ratio and perfect espresso 😅 have mine since 3 days.

Hey there, are you using the single wall, or dual wall basket? With the dual wall, just about any pre-ground coffee should work. But with the single wall, like in my video, you need fresh coffee and a fine grind. Cheers!

Hi, it's based on volume. There is a little water counter in the machine, that knows how much water is flowing. I would suggest getting a scale, and holding down your shot button to get for example 30 grams.

Sry but i don’t understand one important thing. If italian espresso national institute tells that single coffee is with 7 gr in and 25 ml out (about 27-28 gr maybe), how can it be that is a ratio of 1:2 or 1:2.5? This rules is ok only for two coffee right? With 14gr in and 28gr out, the same that you have done in this video! However thanks for your video, it’s so helpful and sry for my bad english! 😅

@@TomsCoffeeCorner in the pdf there isn’t something that talk of brew ratio, i have done myself a simple calculation with 7gr in and 25 gr out isn’t 1:2 that use all the world for standard espresso 🤣. Maybe our espresso is standard and the other are double espresso? However with you coffee machine you can try what change with 7gr in and 28 out and 14 in and 28 out 😉

Hi Tom :) I enjoy my double espresso shots, but i have issues both with single and double shots when it comes to timing (with the baskets & portafilter that ship with the machine). My espresso (including preinfusion) runs through in like 12-15 seconds - any advice on what I can do there? Taste is good as far as I'm concerned. Is the basket/portafilter pressurized? if not, you are grinding too coarse. If it is pressurized, buy a botomless porta and an IMS filter as advised on this video. Hope that helps.

If all the buttons are flashing, then it may still be too hot from steaming. You can just wait for it to cool down, or you could turn it off then on, to clear the fault.

No, not really. It most likely has to do with using beans that are too old. I’m afraid you will just have to experiment, and find some better beans. They should ideally be between two and six weeks off of roast date.

Well, you could adjust it to taste, but the 2:1 ratio is the current standard in most regions I know.

But the problem is not with the depth of the metal of the port a filter , but with the point where the black plastic handle joints the diameter of the port a filter.The edge of the cup will be in contact with this point of the handle because of the thickness of the scale and will not fit.Is that right?

Well, that depends on the height of your cups. Some of my cups fit, others don't. I'd say the clearance is good though, compared to other machines.

Hey Tom - I'm deperate!!!! I have the Delonghi Dedica Ec685 and I have always been happy with it but wanted to go for the improvement of having a bottomless portafilta. I have tried different coffees, different grinds, different tamping pressures, different everything but no matter what I do the coffee comes out all over the filter and never goes to a central stream and hardly any crema. I see all these videos of that lovely shot with lots of silky crema from the centre of the filter but I just cannot replicate it. What am I doing wrong?? Please help!!!!

I only buy good quality beans from two or three roasters in my area so I dont think its that. Could it be the basket in my portafilter?

I only seem to have a problem with the bottomless filter as I can make a good coffee with the standard portafilter but wanted to upgrade. Hasn't seemed to work though.

@@davidjennings9253 Well you need a decent home burr grinder. Pre-ground doesn't work well, because once ground, it loses freshness too quickly. The cheapest I can recommend is a handgrinder like the Kingrinder K4, or a Eureka Manuale.

Hi Tom! Love your videos. They all seem made just for me. Haha. I bought the Bottomless portafilter, but I don't have a scale and My coffee grinder is just a grinder from hamilton beach, like a 20 dollar one that i've been using for like 3 years now.( Baratza Sette 30 will come tomorrow though! yay! ) Currently my espresso is channeling bad and the creme is not forming well and is pretty bitter ( I can now see it because of the bottomless filter). The Creme was pretty decent with the pressurized filter, but i think thats the idea. ( Don't have to have consistent grind, don't have to tamp it perfectly) Im doing it all by eye but im not even sure im putting enough grounds, or too much , not tamping it enough or too much. Going to invest in a scale. Any recommendations for a decent one that won't break the bank? and thanks for the programming video ! Didn't even know I could do that! Hey Charles! Thanks so much for your feedback! Yes, the bottomless portafilter will expose all issues, and with a non-pressurized basket it is up to YOU to make the resistance of the coffee puck. But, ot is totally worth it. I bought the Timemore scale for I think around $60. It is a real nice scale with built in timer. @@TomsCoffeeCorner Got it Ill deff check it out! My Sette Grinder came in this evening and I tried it for the first time and the espresso barely even came out of the bottom. LOL. I had the grinder set to 7 so I will have to do some dialing in for sure. And also I noticed that when I tamp ,the tamper seems to get stuck when I press down past a certain depth. Errggggg. I have a ways to go and different things to try but it will be a fun journey! Thanks for your videos!

You should invest in a decent grinder instead. The 20 bucks grinder is exposing your coffee beans with too much heat and therefore you lose the majority of the taste. Grinding your coffee with a better tool will instantly give you a better taste and it will also help you to eliminate a lot of the channeling issue that you currently have because the coffee powder is more evenly

@@TomsCoffeeCorner I don't think it's about coffee because I used to use same coffee (Lavazza red one) with my old espresso machine ( delonghi vintage icona) and the taste was okay for me. I really don't know where I do mistake. Temperature set to high level. water hardness is hard because I use tap water. For single, I use 7gr coffee and tamper it. I feel like extraction is a bit fast then what I see on the youtube videos, that's it. thanks for taking the time to reply.

Bei mir kommt gar kein Kaffee raus! Wenn ich nur Wasser durchlasse, dann funktioniert es wunderbar. Ich habe schon alle verschiedene Mahlgrade durchgetestet. Von Espresso bis French Press. Genau das gleiche Ergebnis. Das Wasser staut sich im Filter vor dem Kaffee. Irgendwas stimmt bei meiner Maschine überhaupt nicht.

There’s really no need to use a single cup basket. Use the bigger one with 14g. You will get “double espresso”. If you need a single espresso for whatever reason you should drain half of it down the sink😂

The perfect shot doesn’t exists, individual tastes are different. Italian espresso recipe is a marketing strategy, without any logical criteria to justify. How many people goes crazy with this idealistic coffees where have been proven dozens of times that is better to variate the ingredients of no matter the food or beverage to adapt for individual’s satisfaction…
