Sure! Here's a simple recipe for Desi Chicken (also known as Desi Murgh), a popular traditional Indian chicken curry:
Desi Chicken Recipe
Ingredients:
1 kg chicken, cut into pieces
2 large onions, finely chopped
2 tomatoes, finely chopped
1 cup yogurt
1 tablespoon ginger-garlic paste
3-4 green chilies, slit
1/2 cup fresh coriander leaves, chopped
1/4 cup fresh mint leaves, chopped
1 teaspoon turmeric powder
2 teaspoons red chili powder
1 tablespoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
Salt to taste
1/2 cup cooking oil or ghee
Whole spices: 2-3 bay leaves, 4-5 cloves, 2-3 cardamom pods, 1 cinnamon stick
Water as needed
Instructions:
Marinate the Chicken:
In a large bowl, combine the chicken pieces with yogurt, turmeric powder, red chili powder, and salt. Mix well and let it marinate for at least 30 minutes to 1 hour.
Prepare the Masala:
Heat oil or ghee in a large pot over medium heat.
Add the whole spices (bay leaves, cloves, cardamom pods, and cinnamon stick) and sauté for a minute until they release their aroma.
Add the finely chopped onions and cook until they turn golden brown.
Add the ginger-garlic paste and sauté for another 2-3 minutes.
Cook the Tomatoes:
Add the chopped tomatoes and cook until they soften and the oil starts to separate from the masala.
Add the coriander powder, cumin powder, and green chilies. Mix well.
Cook the Chicken:
Add the marinated chicken to the pot and mix well with the masala.
Cook the chicken on medium heat until it changes color and is partially cooked.
Add water as needed to make a thick gravy. Cover and let it simmer on low heat until the chicken is fully cooked and tender.
Finishing Touches:
Add garam masala, chopped coriander leaves, and mint leaves. Mix well.
Adjust salt and seasoning as per your taste.
Cook for another 5-10 minutes on low heat.
Serve:
Garnish with additional fresh coriander leaves.
Serve hot with steamed rice, roti, or naan.
