For the bits at around 4:30, you could have used the Appearance panel and use multiple fills with transform effects on them, but great tutorial nonetheless!

Open the appearance panel (Window>Appearance) and click the "fill" option. Drag this down to the page note icon at the bottom of the palette to duplicate it. Select the fill at the bottom and choose a colour, then (with the fill still selected in the panel) click and hold "fx" at the bottom of the panel and go to Distort and Transform>Transform. Then alter the "move" sliders to your liking. Hope this helps, if you have any more worries, I'll be happy to answer them. :)

Its a good video I like many things about the instructions most of them new ideas on how to do things... but I find the logo a bit... well really dull... but I like the ideas.

You need to make letters to basic vector layer. (Object / expand) That is important if you need to send vector file to "Bear & Arrow" company..
