If you will set the iPhone to 1 jan 1970 in some time zones it will 1969 and the UNIX time minimum is 1970 and maximum is 2038. When you restart it'll stuck at the boot screen with the apple logo. You need to discharge the battery to 0% and after that charge it again. Time will reset to somewhat in 2010s and phone will work.
