The mayo, hot sauce and Lea and Perrins is a classic from the 70's. Most of the time now I throw a jalapeno pepper into the food processor with the ham and onions. Great for sandwiches. Used a habanero once too. Only once. LOL

Who remembers the Underwood Deviled Ham in a Can??? Mom used to bring that on every single vacation so we could stop and have lunch at a rest stop and she would make us sandwich's! Oh God the good ole days! BTW Walmart still sells it!!!!

Grandma (1970s) would make me ham salad sandwiches to take to school. She had her hand cranked food grinder, rather than a processor, but the concept is the same. And not spicy. Sweet pickles, celery, and mayo. Good memories, Chef John! Thank you.

As a kid, my Mom wouldn't buy Underwood Deviled ham because it had a devil on the label, but had no problem making a ton of deviled eggs for Easter dinner. I'm still shaking my head.

This is a little spooky. Just the other day while shopping for anchovies, I found myself face to face with those little paper-wrapped cans of Underwood Deviled Ham and Underwood Chicken Spread. All of a sudden I was seized with an overwhelming craving coupled with an irrational desire to buy one of each, spread them thickly on white bread, and eat them out of view of prying eyes. How I resisted is beyond me but, tell me, Chef John... would this dip satisfy my craving, which persists even still, and which has been magnified to infinity by this video? Or, should I just nonchalantly place those little cans in my basket, and when the teenage checker cracks wise about how gross they are, smile knowingly and make some mildly condescending remark about acquired tastes he won't understand? Please, Chef, I simply must know. ~ Lisa

I never thought about this being made from scratch. I grew up eating the Underwood brand devil ham spread on sliced bread as a sandwich and take to school for lunch. I don’t think I’ve had since I was 8yrs old.

Consider it brought back! Made this for a Ladies' Club Meeting and it was a HUGE HIT! Everyone wanted the recipe! It really IS delicious. So I directed them here. You should be getting some good hits on this page. 😊 Made the mistake of letting Hubby be my taster. He was so bummed I was taking it to the meeting. Had to promise to make him his very own dish this weekend.

When I saw "Deviled Ham Spread", I thought you'd be talking about Underwood Deviled Ham, the stuff in a little bitty can. In the 1950s and 60s, my mother made a party dip/spread out of that - alas, I was too young to take note of what she mixed it with, but I'll bet it included chopped onions and celery. (And my father liked to use the stuff straight from the can to make sandwiches - deviled ham and peanut butter.)

Deviled ham is still a culinary star in my house, as my Venezuelan wife and her family routinely buy the little cans of deviled ham (which they call Diablito) to stuff their arepas with. Now I can impress them with my superior home made arepa filling a la Chef John.

What I like about this cooking channel, is that all of these recipes are very doable. Gordon Ramsey's home recipes and narration are gold, but I don't have a $500/week grocery budget for buying steak fillets and rice wine vinegar to make a 35-ingredient garden salad. Food Wishes gives me ideas that I can actually pull off without going too crazy.

Made this today and forgot the Worcestershire sauce. Tasted it and wasn't that impressed with the results so I rechecked the recipe and added the worcestershire sauce. It transforms the whole thing into something amazing. Don't skip it, it's incredible.

My mom used to make her version for my Dad using a big chunk of bologna instead of ham. I think there was relish in it too . I wasn't a fan but I liked to help with the grinding with a manual, clamp on, Universal brand meat grinder. Chef John's recipe sounds tasty.

Hi chef.....I grew up on this but because we were such a big family, my mom would add a few boiled eggs when grinding the ham up. You really can't taste the boiled egg all that much but it made it go further

It's like my favorite thing to make with Christmas ham leftover. I always save one bag of ham just for this dip. It's not the prettiest dip in the world, but it sure it tasty, or as Red Green would say of this dip "If the women don't find you handsome, they should at least find you handy", and handy it is.

My former mother in law used to make this back in the 70's. She did not have a food processor and didn't use heat (cayenne). I think it was a Depression era method of not wasting leftovers.

I have always loved deviled ham, but my grandmother who raised me considered it a luxury item and we rarely had it. Just before I watched this video I was in my kitchen and noticed a can of deviled ham on the shelf. I don't think it is mine because if I had bought it , it would have been gone by now. :)

Haha.. I was anxiously waiting for the CAYENNE. LOL! I add a pinch to everything nowadays, thanks to our Chef John!!! Is this that 'luncheon meat' we used to get after school as a snack once in a while back in the day? Only HOME MADE this time..? It was more like a slice, not a spread and was in a can. Hm, I liked it very much as a sandwich, but wasn't allowed to eat it daily. I guess our parents knew it wasn't that good for us. We had fresh cooked meals every single day. I haven't had it for 2 decades at least..... does it still exist? I wonder now. X

Ah, a homemade version of Underwood Deviled Ham. One of the few sandwich spreads that came in a can and was worth eating.

Similar to, but so different from, my favorite sandwich spread, "ham salad". Like a few other commenters, it takes the addition of sweet pickle relish, and the deletion of the hot sauce. Nice recipe! I'll make it the next time we have a bring sompin' party.

I haven't eaten Deviled Ham in many, many years. I haven't even thought of it in years. Now, I gotta' make some. I like the idea of the added heat elements. I need to find some Millennials to share it with.

My mom makes this pretty often. Although she always called it meat-spread. Aside from the sriracha and cayenne, it's pretty identical to her version. I personally like to put it on grilled cheese.

My mom dices up sweet pickles for hers which adds a really nice component. It’s much less spicy though!
