This Egg Tadka Dal is a MUST HAVE. I don't know how many times I have been stuck in a situation where I need something simple but tasty to make. Well, here you go.

Ingredients:
2 cup whole green moong dal
salt as per taste
mustard oil 2-3 tbsp.
butter 2 tbsp.
turmeric powder 1 tsp.
red chili powder 1 tsp.
cumin powder 1 tsp.
coriander powder 1 tsp.
3-4 medium finely chopped onion
ginger and garlic paste 1 tbsp. each
tomatoes roughly chopped 2-3 medium
kasuri methi 1/2 tsp.
garam masala powder 1/2 tsp.
fenegurek seeds 1/4 tsp.
chopped coriander 1/4 cup
egg 6-7
green chili 2-3
Process:
Clean green whole moong dal properly and soak overnight. Next day dal size will be double. In one pressure cooker, take dal and add water and salt. Mix well and wait for 2 whistles on medium heat. After release all pressure, check if dal is soft or not. Remove the dal in one bowl. In same pressure cooker, add mustard oil and fenegreek seeds. When seeds pop, add chopped onions. Fry 2-3 minutes. Then add ginger and garlic paste. Mix and saute until the raw smell is gone. add dry spices (turmeric, red chili, cumin, coriander powder). Mix well and add a little water to avoid the spices from burning. When oil separates, add tomatoes and cook 2-3 minutes or until it is soft. Now add boiled dal. Mix well with spices. Now add water. Mix well and cook until it starts to boil. In another pan, add butter. Add chopped ginger, garlic and green chili. Saute lightly and add sliced onion. Fry lightly. Now add tomatoes. Mix well. Saute for a minute. Keep aside. Now add eggs. Stir continually. When it becomes scrambled, mix with onions. Tadka fry is ready to serve.
