If you follow a Mediterranean Diet which is not really a Diet is the best for diabetics. It’s done so well for my sister that she now is no longer on medication and it is controlled strictly by food. I’m not quite there yet but my doctor is sure happy with my results. What the guy is doing wrong is: use olive oil Wash your hands🙄 400* for that long 🤣 mush veggies and over cooked meat Diet coke🤦🏻♀️ Carbs are ok if limited

A - Your kitchen is wobbly B - that amount of salt and pepper will do nothing for flavour with this many veggies C - marinate the chicken overnight D - Wash your hands when you handled raw chicken the second after you've done! And last, this doesn't take 2 hours and don't cover it. And use olive oil

Great recipe. But PLEASE PLEASE wash your hands immediately after touching the chicken (or any meats) to prevent cross contamination. This is something you should already know as a medical student. Thanks for the info. Good luck to you!

No, not a problem. That is mostly fat and fat has low or no carbs.

Sorry about that my finger slipped on the keyboard. Carrots contain high sugar content. When all is cooked as a diabetic l would take 2 ounces of the breast and about 3 tablespoons of the veggies.

Carrots are low on the glycemic index and that means you can eat them without spiking blood sugar.

why would you use so much butter? it is almost totally unnecessary for the vegetables. Looks like a nice meal with different vegetables. Pretty good low carb but the butter makes it high fat. How much do you pay for groceries. I could cook that meal for about $10. You cook well but shop badly. :)
