Dialing in light roast coffee for espresso can be difficult. It took me a long time to figure it out. Fortunately, after practicing on Geisha beans, Guatemalan coffee, and Ethiopian, I was able to figure out how to dial in light roast for espresso on my Flair Signature using a 1ZPresso JX PRo grinder.
===== About the Process =====
Light Roast Coffee is much tougher than Dark roast coffee. Because of the low roast profile, the solubility of the beans are very low. This means you need to increase the yield, water temperature, and preinfusion times in order to get the flavors you want. Otherwise it will be quite acidic and unpleasant.
