That really sucks, best advice is never leave your bike unattended, especially outdoors. Locks and cables should only be used as a deterrent to slow down thief. Nothing is 100%, so stay close to your bike!

how is the brake cable connected to the rear brake? the two cables on the handlebars arnt touching the rest of the brake cables?

That's the Gyro feature aka the Gyro's job. Instead of a continuous cable pull from the Right Brake to the back tire that can be "tangled"...the Gyro serves as a "tangle free" liason/intermediary between the two. (You can spin your handlebars until you're dizzy and blue in the face.) Back to the explanation, You pull the right brake, it pulls the top of the Gyro which moves freely in a 360 direction. The top of the Gyro is connected to the bottom half of the Gyro, which is in turn connected to the Rear brake cables. The tension of the rear brake cables is picked up from there and does all the work.

We got two of these for our daughters kzbin.infoUgkxHL1v1R3NE5x4KiYfyt8dnQmyNYz7qi5L the same size for age 6 and 9. It works very well for both girls. Gears were very easy for them to learn. Changing gears up takes some hand strength and is a bit hard, but they are learning. They did not come with water bottle holders- we actually got confused and thought the Derailler Guard was the bottle holder!! Regardless of these details, the bikes are fantastic- even our six year old who only just learned to ride bikes caught on within an hour of practice and loves it. Lightweight and easy for them to handle. All the parts are in excellent condition and the bikes are easy to assemble and very well packaged. Great choice for kids!

So how do people install front and rear brakes on bmx bikes? I see these flatland riders with both.

The front brake runs down through the headset and exits through the fork. As a result: the brakes, fork, bars all move as one piece in the same direction. Tangling is not an issue with front brakes.
