Spread fresh grounded ginger over fish for steaming but it may be better to choose grass carp or salmon . Its healthier. Tilapia is bred in crowded ponds & live in very toxic environs.

Tips from my Indonesian mom that I think pretty useful to make simple fried fish using almost any freshwater fishes: 1. Use lemon/lime water or vinegar both inside and outside the fish, let it for a few secs, then wash->pat to dry with clean cooking towel. 2. Make a paste from turmeric, coriander seeds, salt and garlic (make sure dont add water while making the paste) 3. Coat the fish using the paste. Both inside and outside, don't forget to make some coarse on both sides so the seasonings will seep in even more. Let it for at least 15 mins. The longer, the better (just put it inside the fridge if u want to let it longer. 4. Deep fry or fry using air fryer. 5. Serve it hot with sliced shallots and chilli with sweet soy sauce on the separate bowl.

I've grown up with wet fish markets my whole life and cloudy eyes and fishy smell (which starts as soon as it's dead) doesn't mean it's bad because the flesh sits on ice and is preserved quite well. The tips like fins and eyes "cooks" in the warm temperature which give off the smell. It's the same mass produced poultry 2nd rate of freshness, 1st being straight out of the sea/tank. This is why you don't sashimi but cook it well.

Anything bought locally in a super market or regular grocery stores is just a bunch of farm raised fish flash frozen …..even the “wild caught” items are frozen before hand ….they just grab the frozen fish out a box then stick it on a bed of ice in the seafood display case….once you take it out the water it’s kind of game over….you only really have a handful of hours before it will start to smell and the flesh brakes down (if not in the proper conditions) witch is why a vast majority of fish sold commercially are flash frozen ….unless you live by a wet market or catch it yourself no aquatic creature is “really” going to be “fresh” ..

Idea for the stuffing. My mom makes a similar dish but she stuffs it with garlic, green onions, cilantro, ginger, chili pepper, and lemon grass all minced up. Add some salt to the mixture for seasoning and then stuff it into the belly. It makes a nice mixture to have with the fish.

Not sure how you're supposed to be getting your fresh fish from over there but I don't trust the general supermarket with fish or seafood. I buy mine directly from the fishmonger at the wet market. And you choose the freshest (clear eyes reddest gills and no strange smells) from the batch of the day. And if you have to do with a not so fresh fish you should marinate them with lemon, lime, or turmeric, it helps a little bit with the smells
