Silpymon and valkirymon are the official ultimate and perfect for hawkmon. Since they're jogress digimon, they can still reach silphymon without gatomon for example, its just that it can reach silphymon faster by absorbing gatomon for energy temporarily. So theres no such thing as a form being unofficial because its a jogress. Its the same with how exveemon can eventually reach paildramon without stingmons help.

I’ve always said, the energy the Digimons receive from their jogress partners serve the same purpose as the energy the digidestined of Adventure 01 receive from their respective crests. The digimons can evolve WITHOUT their crests but it will require more energy to do so, the same can be said about the evolutions of Adventure 02.

I'm always get confused when people say ultimate at mega level digimon. In my generation (ps1 of course) is Baby, Beginner, Rookie, Champion, Ultimate, Mega, Superior. I don't know since when it becomes Child, Adult, Perfect & Ultimate.

It's about making a better video. A long video can mean information overload and that's not good. For example the Tailmon video is 17 min yet I didn't include any of the armor forms. Same with Patamon.
