2:29 Here on the GF action, if you're referring to the capstan (the metal screw on the posterior end) its function is adjusting key dip (also affecting hammer blow distance). Also, that is incorrect, it is incredibly easy to remove. You use one hand to lift the "hammer" or key weight all the way up, then use the other to remove the wooden key stick just as you would in any upright piano.
