Dear Dimitra.......I am so grateful for your including so many vegetarian and vegan (adaptable) recipes. I come from a Lebanese background so what you make is definitely swoon worthy to me. I've already made the potato/tomato/pea stew and shared it with friends who have also loved it. As a primarily vegan/plant based eater, it is always a challenge to include protein without resorting to processed products. I wonder what options you might suggest? Thank you for all you do.

Looks great! I’m definitely going to try this recipe. When I was growing up, my mother used to make “pilaffi me kota”, a pretty simple tomato-based pilaff with bone-in chicken pieces. Are you familiar with this dish and have you already made a video about it? If you know the dish but haven’t made a video yet, I hope you will soon!

I recently learned that brown rice isn’t as healthy as we though… and white rice tastes so much better 🙂
