On the radius rod orientation, what is the reasoning for having the left-hand threads facing outwards on the left side of the car and inwards on the right? Does that help keep the jam nuts from loosening up? But then looking at the closeup when Zach put them on the car they were opposite what he said?

You’re correct, it’s so everything stays tight. You want it orientated so that if the tire rubs the radius rod, it tightens it up. The left rear tire is very close to the left side radius rod.

Hanging the rear with ratchet straps helps get the setup blocks located…

My gf who's also a sprint car fan made an interesting comparison - is the Jacobs ladder equivalent to a shock absorber and the torsion bar equal to a spring? Another question - apologies if you explained this, but what does the radius rod do?

Jacob ladder locates rear end left to right keep rear end centered so torque ball is free and not bound up. Radius rod located rear axle front to rear. Moving radius rod up and down changes rear steer in axle.
