This is a good thing, almost like a brat, onion & beer bath after grilling. Dirty water hot dogs are street food cart terminology. As the vendor sell the hot dogs he replaces the sold ones with new ones without changing the water. Dirty water, the temperature of the water is held around or above 160 F. If it's bizzy day for the cart the vendor may turn you away because the dogs haven't come up to temperature. Or warn you they are not up to temperature. The hot dog maker of choice in NYC is sabrett's hot dog. They also will steam the bun at the carts. It's topped with sauerkraut & mustard is very common. I like the red onion sauce with mustard (sweet & sour.) Chili is uncommon in the carts, but the brick & mortar places like Nathan's will provide you with that. Also most of the brick & mortar places will grill the dogs on a flat top. Dirty water hot dogs are the easiest to hold without burning and uses less propane then grilling. And, they stay shelf stable in their little hot tub. Your version is awesome, and can easily be repeated in a cart....nice job. Stay way cool!

I love dirty water hot dogs. Try it with cajun seasoning or seafood boil seasoning, and hawaiian hot dog buns... the spicy sweet combo is really amazing

I don’t know what part of West Virginia you’re from, but my folks are from Mingo Co. and Martin County, Kentucky, and we call that “Church of God chili” or “churchagawchili” because of how prevalent that style of chili is at Church of God (Cleveland, TN) cookouts and potlucks.
