I don't see the problem with wetting them when dormant in order to remove the old media so long, as you said, you allow them to dry completely and pot back into dry media. I had _a bunch_ of them I ordered from Fred Clarke in 2020 and the moss was so tight, the only way to remove it was to wet it. Didn't harm the plants in the least. Now, in Florida I don't much worry about the plants being cold for extended periods either. I think you've actually done the plant a favor by dividing it and you're more likely to get blooms this year (provided the spider mites don't attack!).
