I am an Interior designer and the proper term for the kitchen cabinet type is inset and you probably want shaker style . The sink is an apron sink . 🙂

Just make sure the contractor understands the local building code, and that any structural changes you do to the roof structure is done to code requirements. Raising the rafter ties could cause wall deformation at its old level. Especially if the floor plan changes. Max, you need to save the old ceiling planks... they look incredible.
