The beauty of using a steam pan for a sink is that there are multiple standard sizes and three (four?) standard depths, different gauges, different manufacturers, etc. So they're much easier to find, much easier to find exactly what you need and you're not price-locked to a single manufacturer. And unlike a lot of round or oval RV sinks, those are rectangular so you're maximizing your sink size vs the room it takes in your tiny house/RV/camper. Another bonus is that you decide where exactly to put the drain, if you need to have it somewhere else than the center. The only downside, as you pointed out, is that the drain sits above the bottom, but surely someone could figure out a clamping jig to press-form a concave bottom for the drain.

How well does your mini sink drain? I'm having a heck of a time getting mine to drain all the way!

Because of the raised drain it won’t empty completely as the basin isn’t recessed. I use my hand to get most of the water out. It also depends on how level the counter is. The flat bottom is very unforgiving in this regard.
