I noticed when you were sewing the fleece pieces you used your regular foot. Have you ever tried using a walking foot? You’d be surprised how much easier it is to sew bulkier fabrics. I quilt, but I use my walking foot for bulkier or thicker fabrics, too. Game changer😊

The pillows are absolutely beautiful. To answer your question with my opinion, I believe that the snowmen would look perfectly fine without a face considering the snowflake doesn't have any embellishments on it. My other opinion is that without the faces, it makes them look more adult like, instead of childlike. It also gives people a chance to use their imagination and create a face for the snowmen in their minds. You did a wonderful job on these. Thank you for sharing!
