Drink the coconut water and eat the coconut jelly. Nothing goes to waste. Roasted sweet potatoes done on wood fire delicious. We in the Caribbean makes what's called potato pudding made with grated sweet potato, little oil , water, black pepper, flour to bind it together, raisins sugar to taste. You can add grated coconut if you desire. Blend and bake at 350°

This looks good, I have to try this recipe, we make a sweet potato pudding in the Caribbean, we grate the raw potatoes add coconut milk, sugar, cinnamon sticks, lard and cook it on the stove until cooked, then put into a baking pan and bake until brown, oh add vanilla essence as well.

We make sweet potato pudding, we add eggs, sugar, cinnamon, nutmeg, vanilla, baking powder and milk all together then bake. Similar with cornmeal instead of the sweet potato. Can put raisins too. Yummy. That’s more like a sweet pancake. Yummy ❤❤❤
