I think many of us hobby-chefs thinks that you pro guys never make mistakes, cut your fingers, overcook etc. Thanx for the inspiration! I'm amazed at how chilled you are. If I knock over anything in the kitchen, I'm furious with myself. :D For me, I usually go medium, which is what I've had for years, but recently I've also tried and liked rare/medium-rare. Gravy, mushroom or pepper sauce are always winners for me, but really, when it comes to steak, if it's done right, it's so juicy it doesn't need anything on top. I'm hungry. :D

I like a nice piece of filet mignon , and when it's ready to serve, I hit it with just a small wedge of blue cheese on top. My butcher recommended this, I tried it and loved it ! gotta love the blue cheese of course ! Cheers from montreal

Awesome vid dude, steak is cooked to perfection. Would love to see you do pulled pork/brisket with the smoker, maybe explore different kinds of rubs? That kind of BBQ seasoning is lacking in the UK, yet so popular in America... Educate us!

I like to rub on some olive oil first then hit it with some sea salt and pepper. grill it to just under medium rare then hit it with a little bit or rub mix - a few sugars, chilli flakes, paprika and cumin. just enough to give it a tasty edge.

Can you do a trip to the butchers - show us how to pick out the best cuts for low and slow, best cuts for grilling etc.? I just go by price then marbling for low and slow - i.e. look for the cheapest in costco then look for the most marbled, salt it for a couple of hours and then let it run slow - if it's not marbled I don't buy anything (beef roasts that is) - seems to work out pretty good. In your burger recipe you ground various cuts - any chance of showing us the best way to pick the cuts you used or does it not matter if it's getting ground? etc.... How to use a whole deer would also be good - not all at once!!

How do I set up my grill for smoking meat? Get the charcoal going and white, then toss in soaked wood chips?

Pretty much, get your charchoal lit on on side of your grill, make a dip in the middle of it and put unburnt charcoal on it so it slowly lights itself. You can either wet your chips or just throw them on, doesnt really matter, put them on when the flames died down. Put your meat on the side furthest away from the charchoal. Put a bowl of water over the charcoals. Put your lid on and forget about it until your ready to put some more flavour on. Hope this helps

+bcgmktg all the water does is keeps a bit of moisture in the air so the meat doesn't dry up. On my smoker the water bowls under the meat so theres no direct heat and the juices drip into it and steam back into the meat. Low n slow :)

i like steak well done. only when i cook it myself though as i can cook it and take it off just as it cooks all the way through and not end up with some dry chewy piece of rubber. i only enjoy the texture at well done. i think theres a lot of snobbery when it comes to steak, as if the rarer you eat it some how makes you better at eating food 😐. surely eat it however you want. ive tried medium and rare multiple times even when out at restaurants and just dont like it cooked that way.

it doesn't make anyone better if they eat meat rare or medium rare. for a lot of people a well done steak usually means for them one that is rubbery and dry, so they avoid it for those reasons.
