As far as I understand recomendations from the tutorial videos the problem with over water flying is only in autonomous mode. In case of losing fix to a target drone stays where it is and when battery is depleted it lands on the water surface. In FPV mode and with controller you can chose return home when losing signal and then there is no danger of drowning. I flew it over water several times and experienced no problem with stability.

My normal view with the informations about flight time speed etc was shaky too because very windy day. Rockstady on. You have to save the image in the google 3 and in the drone. The drone footage is more stabilized that the footage in the goggle 3 And you have to learn to fly in one line that helps me a lot. Than you have a good Resultat. I hope I can help with this answer.

it is not recommended to do fpv (freestyle) with it. You can not recover it yourself in case of a crash. DJI drones are of very high quality and the support is also very good. Always satisfied with DJI. But if you really want to go for fpv, building a drone yourself with a DJI O3 air unit is the better option and ultimately cheaper in case of crashes.
