Chassis reinforcements, engine bay shaving, fresh paint, etc are all necessary when doing an engine swap IMO. My BMW E30 had a decent engine bay, but now the turbo S50 is getting a fresh home with new paint, clean metal, and bracing to keep it all together.

110 welder mig with a .30 wire would handle that no problem you could plug into anywhere in the garage and also switch to .23/.25 wire for thin sheet metal

The engine swap is going great, that S50 will look good there. If I am building such clean E30 I would source a good M-tech 1 body kit instead of a widebody. It would look much cleaner and classier.

Still undecided on the body, that will be the last thing I do. First is engine/get it running. Then suspension, wheels, and brakes.

you should look into getting an oscillating mutli tool, its better than using the angle grinder.
