You don’t get buff by putting the camera on a tripod! Haha I think it’s a stylistic choice. Adds movement to an interview. Helps capture the emotion of the moment. I’ve done something similar on a doc shoot. It’s fun pushing the limits and experimenting with what you can do with a documentary interview.

What Joel said, but also.. Since docs are generally more "true to life," scenes aren't necessarily fully scripted and can be dynamic. It helps to be handheld to relocate and reframe camera quickly and easily, and do it while continuously recording. Sometimes scenes like this can lead to unexpected or emotional moments where reframing is necessary. Also, the movement subconsciously makes the filming of the scene seem more 'real' and honest, almost as if it was captured "in the moment" instead of being perceived as highly produced or directed. This draws the viewer in. Whereas, a static camera can feel uncomfortable, distant, or lifeless.
