When you talk about Christmas and how cold weather in Dalat is a perfect weather for hotpot, it reminds me of celebrating Tet in Hanoi. Eating the traditional sticky rice cake in Hanoi during February. Hanoi is known for its cold weather during Tet. I really look forward to seeing you stay in Vietnam before and during Tet (Lunar New Year) and see how Vietnamese people prepare for Tet. During Tet, most cities will be less busy because people go back to their hometown to celebrate Tet with their family. I hope you could find a family to join in and celebrate a full Tet with the Vietnamese. I notice you have just been here just a few months after this year's Tet. You really don't want to miss that time in the year when you travel in Vietnam because Tet is the Vietnamese's most important holiday in a year. It's not a one-day holiday, it's like a whole week off. You could go anywhere to celebrate Tet in Vietnam. I want to see you eat the celebration feast at local home. I want you to see the atmosphere in the street a week before Tet. I miss seeing people buy food, plants, decorations to prepare for a new year. After that, you can go back to the States feeling proud that you have already known what it's like to celebrate Lunar New Year in Vietnam. Don't forget to eat that Banh Chung, Banh Tet during Tet. Those are my favorites. Don't forget that Lunar New Year is not the same as January 1st World Calendar. You have to check the lunar calendar (Lich Am). Vietnamese people are always excited during a few days before Tet. I could say that this holiday is a big one. It's like Christmas, New Year's Eve and Thanksgiving all together. It's a long holiday. I can give you a certification for completing this mission. Without celebrating Tet in Vietnam, when you leave the country you will feel a bit regretful and want to come back again.

Max, if I haven't followed you on instagram, I would never know that you have been in Vietnam for a while, at least since early 2019, or maybe even before that, and you have been eating many places in Hanoi as well, before going to Saigon. But as I said, it's really worth it to see how the local celebrate Tet in Vietnam. Really need to see that video from you.

Yes, I love the fact that Max doesn't mind trying the "normal" exotic dishes in Vietnam. I miss some of them since the ones they make in the US are not the same, even when I make them because the ingredients are not the same. Enjoy those authentic food while you can! :-)

Fantastic eats today, Max! That banh beo had me drooling, for sure. Yummo! I'm not as big on lau like other people, but I'm a big fan of goi (the salad). And yes, using the rice paper cracker as a vehicle is a good idea to give you that crunch factor (like eating the tiny snails (com hen)). Aren't you supposed to cook the whole egg in the lau instead of cracking it into the lau? I'm pretty sure that's how it's done as you do not want to see the live fetus moving as it hits the hot water. And that che Thai is everything! I'm sure people who can afford it will add flan as well. :)

Hahah Christmas in Vietnam, huh... I have never considered cinnamon with hot pot! Also being in Dalat, I've had both the banh beo and che thai places bookmarked for a while, but have yet to go! I like using your videos to scout out these locations, good tips 👌 I imagine the che thai people are amused you've gone every night and look forward to seeing you each time. I would definitely be!

I grew up in upstate n.y.. orange county choppers put us on map... plenty of great food... I live on the coast of southeast n.c. now.. and let me tell you something... they know about some oxtails down here in south.... I will be making my first fresh crock pot of it soon... Max adding flan cake to Thai tea is too standard. I think maybe these tea sellers still know that adding flan is delicious and reasonable. But they are afraid that customers will criticize it for cost, so they do not put it in, so whoever wants to eat, they call more.
