Great video. I have been using the Golden Mountain Seasoning Sauce & Apple Cider Vinegar as the spritz. I feel it adds flavor but also helps with bark coloring.

I spritz both prok and beef with apple cider vinegar and a flavor of jack Daniels. Definitely adds to the flavor.

I always understood from Franklin the spritz was to cool the outside and keep it from burning while the inside continued cooking. Flavor is a distant secondary concern.

Yes, he says it's to prevent the edges from drying out and helping the brisket cook more evenly. However, I have not been able to confirm that in any of my tests.

It seems like you've busted a myth. I'd given up on spritzing years ago. However I like the idea of the pickle juice flavor on the bark, something I could even do before carving. I've always wondered whether the added moisture, even if it lasts couple minutes on the surface per spritz, would help attract any more smoke. It does seem like you did not detect noticeable difference in smoke flavor, either.

I think it's worth it for the flavor. I'm not yet completely convinced it has no effect on moisture/juiciness/even cooking but I haven't been able to see anything to suggest it does in about 3-4 back to back tests in the past 2 years or so. It's possible I'm missing something. Maybe if I spritz the edges with ice water instead of room temp water for example, or maybe it only really works when the smoker temps is 225 or lower, or perhaps my climate is too dry for it to have a noticeable effect.
