I play outdoor a lot, and in my experience a constantly blowing wind (like simulated by the fans) isn't much of a problem. Gusts of wind are the way harder part.

You should use high velocity fans, like the ones used for drying out a flooded room. Also instead of blowing the fans at each other, have one close to the net blow across and up, and one near the end blowing the other way and down.

You’d need a “shop fan” or two I think. They move a considerably larger volume of air than little office fans. A “blower fan” might work too, they are much more directional.

Hey Pongfinity! I know that this would be a very different video idea but there is this very cool virtual reality game called Eleven: Table Tennis VR. When I first got this game I was astonished by the physics because it was about the exact same as real life and I have been playing it ever since. I think that if you are able to eventually do a video on something like this in the future it would be amazing and it would shed some light on the game since it has such a small platform. Maybe you should team up with Mark Rober and he can get his hands on more powerful fans. He can probably also make a mechanism where the fans turn on and off or go at different speeds at different times so the air is moving in different directions at different times.
