I just baked this bread this afternoon, and I'm amazed at how it turned out!! I'm really bad at baking bread, and I didn't knead it properly so it got all sticky, and i thought for sure I'd ruined it, but it just came out of the oven and it's actually SO GOOD! I baked it in a cast iron pan since I don't have a steamer lol. Def gonna keep this recipe around! Thank you Helly 💖💖

If you have a stand mixer with a dough hook you can do the making the dough part by mixing it on slow for about 2 mins and medium/fast for about 2-3 mins and do the same process after adding the butter. Reason for adding the butter after the first procedure is because when dough contains fat (butter, shortening or oil) and it is more than 8-10% of the flour it will have an effect on the gluten bond; which will make the dough not as springy and you will get a flat bread.

In Yemen where my family are from, this is called kubaneh. Only we have a special air tight round baking tin and it cooks in its own steam but inside the oven. The only difference is the color, the oven gives it that golden brown outer crust. But method and texture is the same otherwise. I ❤️ this bread so much! Reminds me of my childhood. We eat dipped in sour cream or with a Yemenite version of salsa. It's truly as mouth watering as it looks and totally worth making! Thanks for sharing ☺️

@@user-iz5ki3jt3c Bread is not always kneeded! Sourdough bread is almost never kneeded. The dough is too wet for that. Though it is ”folded” multiple times the mechanical manipulation involved is far less than with most ”normal” bread. I don’t know the exact chemical process, but in between every fold there is usually quite a long rest period during which the gluten manages to develop by itself.

You can get something very similar without yeast if you beat the whites separately until whipped then fold them in last with perhaps some baking powder/soda just before folding them in to form the balls. You will achieve something of a souffle/spongecake/brioche.

I'm sorry but beaten eggwhites can't be 'folded' into bread dough. Care to point to a demonstration of this remarkable feat? Without yeast you will not achieve anything remotely similar to bread of any kind. If you want to make a cake, make a cake, because you aren't describing how to make bread at all. Your information is very misleading.

We do not have this model in Iran. Our breads have many models, one of which is lavash bread, which is thin, wide, thin and long bread, which has excellent learning, and we have a bread called baghsam, which is similar to this bread. Who has left his education, your friend Iran 🇮🇷 😘😇

For us vegetarians replace the egg with 2 TBS hung yogurt. To make hung curd take 2cups of regular curd and place a cheese cloth in a big wire filter placed on a large bowl and pour the curd into the filter and allow the whey to drain overnight.

I’m confused. Do you bake after steaming or do you do either steam for 45 minutes, or choose to bake 15 mnts? Or is the 15 mnts after the steaming. It wasn’t clear on how to approach that part so they can come out golden and crispy outer layer? This looks phenomenal and not too difficult to try

If you don't have an oven, you can steam it just like the first instructions she showed. It just won't have that golden crust. Baking it would give it more color and would give it a golden crust. If you're going to bake it, do the second instructions she gave, no need for steaming.
