Wanda, we shred all of our eggplant and then dehydrate. Once completely dried we powder the eggplant at that point and fill half gallon jars with the powder. We use it all year long instead of other thickeners like corn starch or arrowroot. Thickens stews, soups, add to sauces and gravies. We do not like eggplant but this was adds zero flavor but all of the nutrients.

Miss Wanda, did you know that you can freeze your tomatoes as you pick them until you get enough to can. Then just take out of freezer and run water over them and the skins come off so easy after they been froze! My stepmom taught me this. ❤

Eggplant mousse or dip: Get you about 8 average eggplants: put a 1/4 inch slit, top to bottom. Lightly oil or butter, then salt ON THE SKIN only (this leeches out bitterness). Bake at 425 for 30-45 minutes until cooked through. Cool completely. Use a spoon to scrape out “meat”. To 1 lb of “meat” add the following: 2-3 oz of thin-sliced green onions 1-2 ounces red wine vinegar 2-3 ounces olive oil Salt and pepper to taste Get you a bench knife or something with a wide blade: could just cut a can-lid in half and use THAT to hand chop and mix all ingredients. (I also use about a half ounce of, “paste style” chicken base in mine). Great dip. This is called “Melitzanosalata” in Greece. To make “Baba Ganoush” add Tahini (ground toasted sesame seed in oil) and mix. I also add fresh chopped parsley and, tiny diced, cucumber

I make my own compost with my chicken run. The run is 10x20. Each fall I put over four feet high of leaves. The following g fall all the leaves are broken down and turned to rich black compost. And it’s full of worms. I dig it all up with it is about a foot deep or greater. I make piles of the dirt and then refuel the run with the leaves. The following spring I have all that rich compost to add to My raised beds. Fill tubs and buckets for growing. a never ending supply of rich compost. I Turn the leaves five or six times over the year. The chickens love them. No muddy run. Win win. And I know what I have. No chemicals.

Not all composted down yet but by fall you won’t see any leaves. All dirt. And chickens poop when they are it out free ranging make a it fantastic dirt for the garden.

Corn forming "tassel ears" with some kernels forming in the tassel area are due to stress, most often from excess rain/water. The stress causes some latent female traits to develop in the tassel. The normal ears may still form and be fine, but it's a sign of the wet spring you had this year.

I bread my eggplant and "fry" them in batches in the oven, cool then freeze. When we want them in the winter I pop them in the air fryer, SO tasty!

You can make an eggplant casserole. Boil eggplant cubes and drain. Add chopped onions, and crumbled fried sausage, some seasoned bread crumbs (or I’ve started using a box of Stove Top-or store brand), an egg (or two-depending on how big a pan your making) and shredded cheddar cheese. Then bake.

Update on my Grazon issue from early this spring. I emptied my potato tubs and put the soil into two tubs and left them sit. After more than a month the soil that was contaminated didn’t even grow grass, and when I used it to level some low spots the chemical smell from that soil was strong. The first association I made was that it smelled like malathion. It Stunk. I hope others can learn from my mistakes, and stop buying bagged compost and hoping the bad comments are all hype. They’re not.

I slice my eggplant and coat it with a little olive oil and different seasonings and bake it. Then I cool it down and lay it in parchment paper, fold the paper add another layer, repeat and then vacuum seal the packages. Then I freeze it. Works pretty good for preserving guys.

Cube eggplants and put in cookie sheet and freeze it. Then, store in freezer bags but get the air out.

I have had some good luck chopping up eggplant par, roasting it and freezing it. To cook it, I put a little oil on a pan. Drop the frozen eggplant on it and put it back in the oven

Eggplant can be added to spaghetti sauce. Ratatouille is another good way to use it. Tampanade is another use. I try to collect eggplant recipes...I love it.

Prayers being answered! I prayed that God would provide you with lots of food this year! God is so good, He definitely answers prayer! As far as the Danny corn and the sweet corn, with the weird tassels developing corn kernels growing on them, perhaps even though you planted them far away from each other, perhaps the wind cross pollinated them! If the Danny corn on the furthest end away from the sweet corn isn't showing the same signs as the corn that is closer to the sweet corn, then I believe that perhaps the closest end of the Danny corn got cross pollinated with the sweet corn! I had that happen to me one year and had the same weird kernel tasseling on the ends of the corn! May God continue to bless your harvest and your land! Take care of yourselves~ Love you both!

Danny here in Gulfport Mississippi. There is a grocery store named Rouses. They sell pure hay square bales of hay because I called the manager several years ago. He got in touch with the guy who is selling them the hay that was in another part of Mississippi and he said he never usedspray Greyson so the hay I get in Gulfport off of Pass Road does not have Greyson and I checked on it because you taught me how dangerous it was and I want to say a big thank you to you and Miss Wanda

I heard Tag say that they were doing a video with you two soon. Can't wait to see it. Two of my favorite folks! I'm so afraid of dirt in the bags these days. It's necessary sometimes especially with raised beds. But, I'm always so scared until things start coming up. For those of you reading this, NEVER by the soil that Aldi sells either. It slowly killed the herbs I planted in pots. One survived. I planted it in different dirt and it came back to life and did great. I don't know what was in that stuff but, I should have known better. It was grayish brown. Love looking at what you all have planted. I'm getting peppers before tomatoes this year. Weird.

That sludge that’s been touted for fertilizer since the 1970s, at least, is called Milorganite, and the $#/+ that it leaves behind is so nasty that some state governments are condemning the fields and confiscating them, and yes, it was touted as a good thing when it came out by the government agencies. IMO, the people who touted it should feed their families with the crops grown with it. Exclusively.

Wanda, you can always shred the eggplant and freeze dry it or even can it up shredded. Great to throw in soups and casseroles. Same thing with zucchini.

Hi Miss Wanda and Danny. Thank you for sharing what your up to. Got some good size carrots ready to come out. It's exciting getting so much good veggies to can. I can't wait until things take off more here in Iowa Darn raccoons like the corn. What makes the corn back to original like some of yours doing? Those egg plants are going crazy and like trees lol Nice you have all those cantelope. Those are so good. What a blessing that those and the watermelon came through it being so cold and are thriving. Putting the worms in and letting them compost do amazing for plants. And the worms are thriving too. I haven't used Shultz just a soil called Maine Coast that has the compost, worm casting as well as other fertilizer and nitrogen fixer as well as add red wigglers, etc. I learn so much from how you both do things and always making changes as needed to do better. You both are a blessing to all of us watching and so appreciate you both. I've started compost last year, add worms and that I keep adding too and keep it covered and use as needed I'm very leary of grazon so don't use the hay. Most have no idead what the grazon is doing to their soil. Thanks so much for sharing and may you both be continually blessed.

I had severe hornworm problems for years and one year I planted basil in with my tomatoes and have not had a hornworm worm in almost 5 years now I make sure to always plant a couple Basil plants mixed through the rows of tomatoes.

The Mennonites around me are big gardeners. Those are the people I have been getting my hay from since you told me about this 2 or three years ago. They aren't putting that on their hay because they put their anima bedding in their own compost. If you need to buy hay, if you have Amish or Mennonites around you check with them.

Your gardens look beautiful! I’ve had a big problem with cabbage worms - they even attacked my sunflowers. I didn’t put the BT on b/c of what you said about the gut. I did put an insect cloth over the plants after picking off whatever worms and eggs I could find. I should have done that earlier but broke my ankle a couple months ago and got way behind. Oh well, there is always next year. 😁

I like making eggplant boats! Fill with taco meat or spaghetti meat and roast at 375 for 30 minutes. I can’t spend the kind of money you have invested in hot houses, tunnels and above ground planters. I wouldn’t be able to afford to eat! 😅

Those are the most beautiful eggplants! Jacques Pepin has a seriously delicious (everyone loves it) recipe for a gratin with tomatoes, zucchini, eggplant, herbs de Provence, olive oil, cheese, and bread crumbs. It's in the book he did with Julia Child, "Julia and Jacques: Cooking at Home".

I stayed away from the blooms as much as possible as directed. I had to give up picking them off by hand our crops are too big for that. Looking so beautiful what an oasis of abundance you have there. I broke the rules last night and picked peas at 8:30 pm because all the weather forecasts said we were in for a really nasty storm. Those peas are so bitter! And we didn't get a nasty storm only a really good soaker. Another one coming tonight. Hopefully tomorrow morning more peas will be ready and sweet.
