The gluten sensitivity may be falsely attributed to gluten and more likely caused by the pesticides (glyphosate) used in wheat farming. A local food manufacturer and I had a conversation about it and he said he always wondered why people 100 years ago weren't complaining about gluten. Another theory is that the rise in gluten sensitivity may be related to changes in the gut microbiome due to factors like antibiotics, processed foods, and other environmental exposures.

Industrial baked goods are stuffed with enzymes to make the dough rise as fast as possible, hence the bad stuff is’nt broken down and the nutrients are not available for absorption in the body, causing all kinds of trouble. Sourdough, or long proofed are best.👍🏻

American GMO Grains is the problem which has multiple times gluten than EU's American grains are Genetically modified unlike EU grains. This absurd amount of gluten is too much and messes up the gutt lining in high quanities.
