Fun fact about Day at the Races is that it's NOT actually totally random! When choosing which character you want to bet on, the one whose idle animation is going the fastest has the best chance of winning. It's still not a guarantee, but they're the most likely to win. This doesn't apply to Thwomp though, whose chances are always the lowest regardless of how fast it's moving on the selection screen.
