Is there a specific casing for this door or I can install any casing I like?

Do you mean architrave which is any profile you want. If you mean the jamb kit they supply, it fits the pocket door frame and sizes you choose when you order it. Third party options probably won’t fit unless you make your own.

Can you remove door once the jams are fixed?

No, will need to remove one side of header a pocket side jamb.
