I raise my own cows, need 3 of them to make the perfect patty and it's a staggered process, Firstly I raise and Angus Bull to just past 30 or so months old (I home kill and butcher my own product) Then a few months later I raise another breed and do my best to replicate the Wagyu process while that is happening I dry age some of the Angus (1*more tips to follow). Now that the dry aging and Wagyu Process is well udder /not sorry/ way I raise a new cow to create some veal now that everything is dead and butchered we can get to the finer steps. 1* after trimming the dry aged angus I render the trimmings to make a Smokey tallow and the ratio's can change but I've had much success with with 20% angus 70% Home style Wagyu 9.9% veal ( to leave room for seasoning((Sorry those are a secret)). Then you want a well seasoned skillet up to a high temp add the tallow prepared earlier and get a good cook on. This tastes better than the frozen patties that NL buys.

All right. Baking to 165 isn't necessary - look it up. Killing pathogens is a function of time. 165 - instant, 150 - 45 seconds. Dry brine your chicken breast, cook it to 150, and let it rest a few minutes. Juicy and tasty.
