My variant is that half thru the cook, I dunk all the wings a bbq sauce, return them to the kettle to finish and to caramelize the sauce…. Wife loves them

I bought a used Weber performer and it had a rack that was a little rusted so I bought a new one. I have been thinking about what to do with the old rack after I clean it, this is GENIUS. Thank you for your awesome videos.

Thanks for watching another one! Glad you liked this….i thought it was a great idea too! That bottom grate of wings didn’t take anywhere near 15 more minutes, btw. Once I removed that top grate they were done in just a very few minutes. They just needed browning and they got there quickly. To be honest, it worked out well because by the time I got this grate dusted the bottom was ready. Worked out great!

I use a double grate but set a foil cover 16 in Chicago deep dish pizza pan as drip pan to do indirect, and set the second grate on top of that. Haven’t tried the higher temps you’re doing. Great video!! I enjoy your work!!

Man, I agree...they have some fantastic rubs! I used The Gospel in a video coming next week and that stuff is awesome. I also like Sucklebusters Clucker Dust..it has a slight heat to it as well but gosh it's good. Thanks for watching and the recommendation!

I am a new sub as of today. Love the videos. Have you done wings in a rotisserie basket? I have seen tons of videos on rotisserie wings but I have not seen any videos comparing them to Vortex wings. If you have done both, i was curious what your thoughts are on which are better. I am deciding whether to buy a Vortex or a rotisserie set up. I would rather go with the Vortex unless the rotisserie wings are much better.

First, thanks for subbing! It's greatly appreciated! As for rotisserie wings...no, I haven't done them. But either way, if you are deciding between the rotisserie and vortex, I would definitely choose the vortex. Here's why...you can cook so much more than just wings with the vortex. You can do wings, thighs, breasts, steak, veggies, etc. And when you do steak, you can do a reverse sear right over top of the vortex. Don't get me wrong, I am sure the rotisserie would do a great job, it's just less versatile. Just my opinion of course. Hope this helps and thanks for the kind words!
