The bacteria in cheese breaks down the lactose. The longer the cheese is aged, the less lactose it has. I was lactose intolerant for a long time, but broke out of it by drinking milk (start small and slowly increase) for about 2 weeks. I once read an article that said if you stop drinking milk for six months you’ll become lactose intolerant and also that you can reverse it by drinking milk. It really works!
