So around 1:52 he's playing on the 5th and 6th fret, lowest string right? How does he do that on he same exact string but sound an octave lower at around 2:04? It sounds great but I'm just curious about how all that works lol

Pitch shifting is how this happens. You can use a drop tune pedal to raise or lower your pitch by as many semitones as you would like to go. Certain plugins can also give you the ability to do this, or even amp profilers/modelers have this feature built in.
