When the free moisture (on surface) is eliminated, it is CMC and when the un- bounded moisture (under surface) and bounded moisture (hydrous form like copper sulphate Penta hydrate) is eliminated, it is EMC. At EMC if we keep the conditions ( temp &humidity) the dried substance will neither regain moisture or eliminate remaining moisture.

Spray dryer: Working involve three stages 1.atomization of liquid 2.drying of the liquid droplets 3.recovery of the dried products Feed is introduced through the atomizer to form fine droplets Hot air is introduced in to the drying chamber through the inlet present on the roof Fine droplets are introduced in to this hot air Hot air surrounding this droplet will immediately dry them and form a tough shell. The liquid present in the innerside of the shell will diffuse out through the shell at a particular rate. At the same time heat transfer from outside to inside takes place. And this will be greater than the liquid diffusion rate. As a result heat inside mounts up and it allows the liquid to evaporate at a faster rate. so pressure inside the droplet increases and it causes the shell to swell. Gradually the permeability of the vapor increases and shell thickness decreases. At a particular point the shell ruptured and it releases the pressure. The temperature of the air is adjusted in such a way that the droplets should be completely dried before reaching the walls of the drying chamber.. Centrifugal force of atomizer drives the particles in a helical path. This particles travels the helical path and finally falls at the bottom. All these process are completed in a few seconds So this is the working procedure of spray dryer
