Two Windows installed on one computer work completely independently of each other, and all applications in these Windows work in the same way as Microsoft Office - completely independently. You can install Microsoft Office in Windows 10 and log into it with your account with which you use Microsoft Office in Windows 11.

As Windows 10 support is ending in 2025, I'm interested in testing Windows 11 variants like Tiny 11, ReviOS, and Ghost Specter directly (not in a virtual machine) before making a decision. With dual boot I can go back to my "stock" windows 10 at any time if something goes wrong.

My work computer always has two or even three different operating systems installed, and from personal experience I can give you the following recommendations: The best option is not to install several systems on one disk, but all operating systems should be installed on different physical disks, and before each installation you should disconnect the SATA connections from all other disks. If you have a desktop PC, then you can disconnect the SATA cables, and on a laptop on a desktop computer you can disable disks in the BIOS, this will be even more convenient. After that, in the Boot Priority, put in first place the Windows that is more necessary, and load another OS using the Boot Menu. I do this for the following reason and to avoid problems: at the beginning of the installation of the second Windows, the installation program installs a small boot loader utility, with which, after each time you turn on the computer, you can choose which Windows you need to load. But if for some reason this utility fails, you may lose access to one of the Windows. On the contrary, installing different Windows on different physical disks eliminates problems of this kind, since they are installed completely independently of each other.
