The Snow Queen Cake

The Snow Queen Cake is another childhood dessert, has a delicious vanilla sponge cake bottom layer, vanilla and chocolate pastry cream, a layer of biscuits and a last layer of whipped cream. The decoration is quite simple, I used just some coconut flakes to replicate the snow.
⭐ Ingredients for the vanilla cake (I used a tray with dimensions 25x43cm):
5 egg whites
a pinch of salt
100g (½ cup) caster sugar
35ml (2 ½ tablespoons) vegetable oil
120g (1 cup) plain flour
5g baking powder
⭐ ingredients for the vanilla and chocolate pastry cream:
500ml (2 1/4 cups) milk
5 egg yolks
100g (½ cup) caster sugar
35g (4 ½ tablespoons) corn starch or 70g (½ cup) plain flour
200g (¾ cup 2 tablespoons) butter
100g (3/5 cup) dark chocolate chips
vanilla extract (or vanilla sugar)
coffee extract (optional)
⭐ For assembly:
150g (2/3 cup) biscuits
150ml (2/3 cup) milk
200ml (1 cup) whipping cream + 1 ½ tablespoons of powder sugar
⭐ For decoration: desiccated coconut
🔥 Baking: I baked the vanilla cake layer at 180 degrees C (without ventilation) for 12-14 minutes.
