Yeah, Ambon is actually about 60% Christian, so visiting the city during Ramadan shouldn’t be an issue at all. That said, if you’re heading to the major cities in Java, you’ll still be fine even though they’re Muslim-majority; plenty of shops and restaurants stay open. However, there are more conservative areas in the provinces where most shops do close during Ramadan, so it depends on where you go. As for durian, it’s always fascinating to hear foreigners describe the taste. Even among Indonesians, the fruit is divisive; some absolutely love it, while others can’t stand it. But regardless of how we feel about it, it’s something we’ve been familiar with our entire lives. For us, it’s less about discovering its flavor and more about growing up with it as part of our culture.

Ah yes durian. That one definitely sounds worth trying. I’m right there with you on opinion of durians. The fruitier sweeter ones are best. It always seems they are a mixture of flavors and fragrances but it’s more enjoyable when it’s fruit custard with a hint of onion and garlic, and challenging when one smells like garbage and tastes like a cross between custard, garlic, onion, metallic, and partially rancid raw chicken…

A fruit I'd like to love. Except that it's a bloody Durian. I thought myself, "garlic flavoured bubblegum". Even so, one teaspoon was enough to defeat me . I asked my Philippino neighbour if she'd like it? "Sure, I'll come over later". "Not soon enough. I need that thing out of my house this instant"! For the curious, I include food writer Richard Sterling's take, "its odor is best described as pig-excrement, turpentine and onions, garnished with a gym sock." It might actually taste better than a shit sandwich. You still can't make me say it's yummy though.

would prefer langsat to sit there ripen a bit, if you go for relatively fresh one, the latex is a bit annoying on the hand and give bitter taste. let it sit for a while, the latex will be completely gone and much easier to deal with, also gets sweeter.

Also you should open it from the bottom part not the top. the skin will be seperated nicely into a few section with little to no latex.

Indonesian here; it's perfectly fine to eat and drink during the day during Ramadan. You can do it discreetly behind the curtains that most restaurants install during the month, or you can choose to sit at the back of the restaurant where fewer people would see you. But that's just a matter of courtesy anyway, Indonesia is not an Islamic country. Drawing the curtains is just to show respect to those who are fasting, but there are many people who don't (including Muslims who are exempt from fasting for various reasons or simply don't do it) and they still have to eat and drink throughout the day. Also, the province of Moluccas has an almost equal Muslim and Christian population, with the capital city of Ambon being about 60% Christian. Even in the big cities of Java, things are fine; despite the Muslim majority population, many shops and restaurants remain open. However, there are more conservative areas like Aceh province where shops are closed during Ramadan, so it really depends on where you are traveling in Indonesia.

Not a biotech *expert,* but I do have an answer for you. Part one: less challenging varieties of durian already exist. They're pretty good, but some people prefer the funky versions. Two: flavors are actually pretty complex. It isn't as easy as just switching off or on a handful of "flavor genes." For now, breeding programs are a superior method of cultivating new varieties.
