Mutton Head Roast Recipe - Whole Goat Head Roast Recipe
Ingredients:
Goat Head - 1 full
Cooking oil - 150 ml
Shallots (sliced) - 10 nos
Onion (chopped) - 1 cup
Mustard seeds - 1/2 tsp
Whole red chillies - 3 nos
Tomato (chopped) - 1/2 cup
Ginger (julian cut) - 1/2 tsp
Green chilli (slit in two halves) - 3 to 4
Chopped garlic - 1/2 tsp
Curry leafs - 1 tbsp
Turmeric powder - 1/2 tsp
Coriander powder - 1/2 tsp
Chilli powder - 1/2 tsp
Kashmiri chilli powder - 1.5 tsp
Black pepper (crshed) - 1 tsp
Fennel seeds powder - 1/2 tsp
Water - 2 cups
Salt to taste
Coriander leaves - optional
Method:
Step 1: Heat a deep pan and add cooking oil to it.
Step 2: Once the oil is hot, add mustard seeds and red chillies to splutter.
Step 3: Add Shallots, onions, ginger, garlic, curry leaves, and green chillies. Mix and cook for a while.
Step 4: You can add turmeric and salt to the pan, mix it well and close the pan and cook for 2 minutes.
Step 5: Add cleaned and slit mutton head to the pan. Mix it well with the cooked onion mixture.
Step 6: Add 1 cup of water, close the pan with a lid and cook on medium heat for 15 minues. Make sure to open the lid in between and mix it well.
Step 7: After 15 minutes of cooking, add chopped tomatoes and the rest of spices to the pan. Mix them well and add another cup of water. Make sure that the mutton head is mixed with with the spices. Close the pan with a lid and cook for another 45 minutes to 1 hour. Open the lid in every 5 to 10 minutes and give a mix. If needed, you can add more water.
Step 8: After the head is cooked for 45 to 1 hour, stop the fire and garnish with chopped coriander leaves.
Mutton head roast goes well with puttu, idiyappam, appam, rice, parotta, and others.
