No idea how I found your channel but what a pleasure it has been to explore your videos. I too was taken to Paris by my first boyfriend and we spent the night at the Ritz. He taught me the refinements of life and in my 30s sent me to live in France. I finally spent 20 yrs as a butler for a French family allowing me to live a life full of luxury and sophistication. Now that I am 70 yrs old, retired and living alone I still appreciate life. Though not the same I see in you many of the trends that were part of my youth. You have a new and fervent fan.

Thanks for this delightful recipe presentation. Even at 80, I can hardly wait to try it out at a forthcoming tea for some of my academic colleagues. I usually serve my scones, for which I must always bake extras for them to take home, but this, I'm sure will be a welcome variant. I generally offer Earl Gray tea, but never thought to try the aromatic leaves in this way. Even at 80, this old dog is, hopefully, learning new tricks, thanks to your delightful videos, a gracious oasis in this (USA) frantic and frenetic world. Yes, Starbuck's and their rather inferior mass- brewed coffee, have unfortunately taken over the popular market here in the USA. I confess to being a "coffee snob" and only serve coffee (real, ground by myself) at breakfast, which I brew in scrupulously cleaned utensils, and tea (often Earl Gray) throughout the rest of the day (coffee is too strong to match with afternoon "tea".) So, I am eager to try this new recipe at my next afternoon party. Thanks to Nicolas for yet another delightful midweek video !!

The cake itself is fantastic, highly recommend. The sugar icing is good too, but I found that substituting it with cream cheese frosting with lemon zest and earl grey in it makes it even better. Great video
