Today I’m cooking with seasonal ingredients from our farm, creating an early summer menu. Join me in this “cook with me” as I make meals to feed my family.

SPINACH QUICHE - 3 pies
• 3 pie shells
• 1 lbs spinach, blanched & squeezed of liquid
• 3 bunches of green onions, sliced
• 1 dozen eggs, beaten thoroughly
• 1 cup milk, or 1 can evaporated milk
• 1 container ricotta cheese
• salt & pepper to taste
Prepare pie shells and preheat oven to 375 degrees F.
Blanch spinach and remove excess liquid (I use a nut milk bag to do this). Cut up spinach and transfer to a large mixing bowl. Add green onions, eggs, milk, ricotta and season with salt and pepper. Mix thoroughly. Pour into prepared pie shells and bake for 50-55 minutes. Eat warm, or at room temperature.

Hey my friend!!!!! First, let me tell you that you look lovely with the dress! That color looks great on you. You just amaze my all the fruits, vegetables and herbs that you harvest. Those strawberries looks so yummy. I purchased my first strawberry plant this year to see if I can harvest strawberries. I actually harvest a few. I would like to try to grow more next year. Awww, thank you Terri! That is very heartfelt ❤️❤️❤️ Homegrown strawberries are so good! I actually didn’t purchase mine. They where already here when we moved in. I moved them over to my garden, but I’d love to have a strawberry patch all its own! 🍓

My Foxgloves are beautiful this year.They all turned out to be white.They self-seed each year and the colour is always a surprise.

Yes!! I love that they self seed. Mine started out as magenta, but I also got some white and light pink ones through self seeding. So beautiful! ❤️

Suzanne, wow that salad harvester is amazing. I've not seen one quite like it. Strawberries fresh from the garden are the best. I have family dinner on Sunday afternoon quite often. Last year about this time I had the family over for dinner and had a bowl of strawberries fresh picked from the garden. My 18 year old grandson came over as well and loves strawberries. He had only eaten store bought half ripe monster strawberries. I encouraged him to try the strawberries while I finished up with dinner. He picked one up and popped it into his mouth and I waited for the response. His eyes opened wide and he said, "These are amazing." And I said, "And that is how a strawberry is supposed to taste." City kids today don't really know the taste of good fresh food. We had two hot days of 100F (38C) just before another harsh storm come through last night. It rained about 1.5 inches of rain with baseball size hail and 90 MPH (145 KPH) wind. I lost power for about three hours. There's lots of tree damage along with house and car damage as well. Fortunately, my neighborhood was not hit with the brunt of the storm. Flash flooding is an issue and sections of some Interstate highways are closed. Again I've been spared from that. This year has been a bad weather year resulting in not much gardening. But Fall is coming. Maybe there's a possible time for fall gardening. Have a great time with company and feeding the hungry men. Oh Dave, sorry to hear of the bad weather!! I’m glad you were spared. We have had a really long spring, with lots of rain. I’m hoping that will result in less forest fires this year. Last year was really bad. We know a couple who’s home was destroyed in the fires. Fresh garden produce is so amazing in flavour that it is worth the wait. It is hard for me to buy certain things from the grocery store now. That was one of the reasons I fell in love with gardening. I really hope the weather turns around for you! I know you put a lot of work in your seed starting this spring!! Have a great day ❤️

The color of your dress is very good for you and it looks very nice. Our strawberries were a disappointment this year. Some say you will get a better rise on your biscuit/scone if you do not twist your cutter (just go down and right back up). Yours look very good.

Thank you so much! ❤️ Too bad about your strawberries. Some of my plants are doing better than others. I have only had strawberries for a couple of years now, so I’m not an expert on growing them. I transferred the baby plants to a new bed this spring, but the undisturbed baby plants that I left, and the parent plants are producing way more berries than the ones I moved. Maybe next year those ones will produce better for me. 😊

You say that spinach doesn’t need washing but here in the states if you buy fresh spinach leaves you have to wash them several times to get the ground out.

Yes, it can definitely depend on how it is grown and especially the watering system. Just from my experience on our farm - which is an organic farm. Spinach, I believe, is one of the “dirty dozen” in terms of being sprayed. So definitely wash!! If you don’t know how it was grown, or where it came from. I can only do this confidently because of it being grown right here, and my experience with it.

Love all the recipes using eggs! We have a ton of chicken and duck eggs coming in! Now you’ve made me hungry for strawberry shortcake! I’ve got quite a few berries in the fridge. Looking forward to you sharing the recipe for the shortcake. As always you are so inspiring!

Beautiful dinner, beautiful dessert!! I loved the video, Suzanne. Strawberry shortcake is probably my favorite dessert (homemade) next to apple pie (homemade). I have a strawberry patch, too. We got our first yield this year. Though a small yield. I'm hoping my patch will grow more for next year. All of your dishes look absolutely delicious, thank you!!

Thank you Roberta! ❤️ I’m so glad you have a strawberry patch too! I need to learn more about growing strawberries. My older ones are producing more than the younger ones, but I’m guessing that eventually you need to completely remove the older ones, but I’m not sure. But they are so good! 🍓
